High-grade Organic Uji Matcha products are cultivated under the diligent management of tea master Juro Okuda. The tea is covered with cheesecloth for as long as possible to produce a deep green color.
It is very difficult to grow organic matcha; one must fight against both bugs and illness. Harmful insects appear because of small climate changes, destroying the matcha. For this reason, it is essential to manage the cultivation in a way that places important on the natural ecosystem.
Top-grade, special high-grade, and high-grade products are ground in a stone mortar. This creates a unique smoothness that is perfect for tea ceremony usage.
Products for commercial usage can be incorporated into aojiru (green juice), cakes, or noodles. They are ground in a continuous grinder called a "bead mill."
